I love this dinner because I can prepare all the ingredients separately and put them in the fridge for a week’s worth of fast food! High protein, low carbohydrate, nutrient-rich, simple. INGREDIENTS:
1 milk-poached chicken breast
1 cup rocket
1/2 cup roasted pumpkin
2 tbsp coconut yoghurt
1 tsp lemon juice
1/2 tsp sea salt
2 tbs roasted chickpeas
METHOD:
- Mix together the coconut yoghurt, lemon juice and salt.
- Assemble chicken, pumpkin and rocket, then drizzle over the dressing.
- Top with roasted chickpeas, then season to your liking!
